Why Kasseri is the King of Saganaki
While many restaurants use Kefalograviera or even Graviera, purists know that Kasseri (when aged properly) offers the superior texture. It doesn't turn into a puddle of oil like younger cheeses, and it doesn't stay rubbery like Halloumi. It melts, but holds its shape.

Classic Kasseri Saganaki
Ingredients
- 200g Authentic Greek Kasseri Cheese (Block, not slices)
- 2-3 tbsp All-purpose flour (for dredging)
- 2 tbsp Extra Virgin Olive Oil (for frying)
- 1/2 Fresh Lemon
- Freshly cracked pepper (optional)
Instructions
- Prep the Cheese: Cut the block of Kasseri into a slab about 1.5cm (0.5 to 0.75 inches) thick. If it's too thin, it will melt before it crisps. If it's too thick, the center won't warm through.
- The Water Trick: Briefly run the cheese block under cold tap water. This helps the flour stick (creating a better crust) without using egg wash, which makes it too heavy.
- Dredge: Immediately press the damp cheese into the flour. Coat all sides thoroughly, then shake off the excess. You want a thin, even layer.
- Heat the Pan: Heat the oil in your skillet over medium-high heat. The oil should be hot but not smoking.
- The Sear: Carefully place the cheese in the hot oil. Do not touch it for at least 2 minutes. Watch the bottom edges turn a deep golden brown.
- The Flip: Slide your spatula under quickly and flip. Fry for another 1-2 minutes on the second side.
- Serve: Remove from the pan immediately onto a serving plate. Squeeze the lemon juice over it while it's still sizzling. Serve hot with crusty bread.
💡 Troubleshooting
Cheese melted into a blob? Your pan wasn't hot enough, or the cheese was too fresh/soft. Try freezing the dredged cheese for 10 minutes before frying next time.
